Sweet Labneh (not) Pizza: Burnt Honey, Labneh & Fennel on 4-Day Fermented Focaccia

Some flavour combinations just work: salty and sweet, creamy and crisp, tangy and floral. The Sweet Labneh (not) Pizza hits all of them at once. It's the pizza our regulars tell their friends about — the one that sounds unusual on the menu and then quietly becomes the thing you order every single visit.

Labneh: The Star of the Levantine Table

Labneh is yogurt, strained until it becomes something richer — thick, tangy, and impossibly creamy. It's a staple across the Levant, eaten with olive oil at breakfast, spread on bread, or served alongside just about everything. At Levant, we make our labneh in-house, and it anchors several of our favourite dishes — but nowhere does it shine quite like on the Sweet Labneh.

What's on the Sweet Labneh (not) Pizza?

We start with our signature focaccia — '00' Italian flour, fermented for four days until the dough is light, open-crumbed, and deeply flavourful. Then we layer on garlic confit, mozzarella, house-made labneh, burnt honey, sesame, and fennel.

The burnt honey is the secret. Cooking honey to the edge of caramelization strips away plain sweetness and leaves behind something deeper — toasty, almost smoky, with a gentle bitterness that plays beautifully against cool, tangy labneh. Sesame adds nutty crunch, fennel brings a whisper of anise, and garlic confit ties the savoury side together. Sweet, salty, tangy, floral — every bite lands a little differently.

Pro Tip: Add the Fennel Honey Dip

For $2.50, add our fennel honey dipping sauce. Dragging a corner slice — all crispy edges — through that dip is, in our humble opinion, one of the best bites on Bloor Street.

Vegetarian-Friendly, Vegan Option Available

The Sweet Labneh is vegetarian, with a vegan option available. It comes as a single (4 square slices, 9" square) for $15 or twins (8 slices) for $28 — perfect as a shared starter-slash-dessert hybrid or a meal all on its own.
