Chickpea Fettet (not) Pizza: Toronto's Favourite Comfort Dish, Reimagined on Focaccia

If you grew up around a Levantine table, you know fatteh. It's the dish that shows up on slow weekend mornings and holiday spreads alike: warm chickpeas spooned over crispy bread, blanketed in garlicky yogurt and tahini, finished with fried nuts or onions. It's comfort food in its purest form. At Levant, we asked a simple question — what happens when fatteh meets our 4-day fermented Sicilian-style focaccia? The answer is the Chickpea Fettet (not) Pizza, and it might be the most comforting vegetarian pizza in Toronto.

What Is Fatteh, Anyway?

Fatteh (sometimes spelled fetteh or fette) comes from the Arabic word for 'crumbled' or 'broken' — a nod to the torn pieces of toasted flatbread that form its base. Across the Levant, from Damascus to Hebron, every family has its own version, but the core trio never changes: chickpeas, creamy yogurt, and tahini. It's a dish built on contrast — warm and cool, crispy and creamy, rich and bright.

How We Turned Fatteh Into (not) Pizza

Our version starts the way every Levant (not) pizza does: with focaccia dough made from '00' Italian flour and fermented for four full days. That long, slow ferment gives the crust its signature airy crumb and crisp bottom — the perfect stand-in for fatteh's toasted bread.

From there, we build layers of flavour: garlic confit, house-made labneh, mozzarella, tahini, cumin-spiced chickpeas, pepperoncini, fried onions, and fresh parsley. Every bite delivers that classic fatteh contrast — the tang of labneh against nutty tahini, warm spiced chickpeas against crispy fried onions, all anchored by pillowy, crackly focaccia.

Vegetarian, With a Vegan Option

The Chickpea Fettet is fully vegetarian, and like most of our menu, it's available with a vegan option — just ask for vegan cheese. It comes as a single (4 square slices, 9" square) for $16 or twins (8 square slices) for $30, making it an easy pick whether you're grabbing a solo lunch or feeding the table.
