Happy New Year, everyone. I hope you were able to enjoy some well-earned downtime with the people you care about. During the holidays, I had a chance to reflect, and it struck me that it has been a long time since I shared the story behind Levant and what truly makes it special. When we opened Levant in 2021, our goal was simple but ambitious: to do something genuinely different. I have always believed that cultures, flavours, and ideas, much like people, can come together beautifully when you focus on the common thread that connects them. It is a belief that has shaped not only this brand, but how I see the world. That philosophy is why pizza and Mediterranean flavours work so well together at Levant. It is a different approach than what most people expect, but one that deeply respects technique and tradition. From our four-day fermented focaccia dough to fire-roasted tomato sauce to freshly made parsley pesto, every element is intentional. The same thinking applies to our appetizers. Our hummus, for example, borrows from French technique by using garlic confit as its base, creating a rich, umami driven depth that, in my opinion, stands among the best in the city. Or take our kunafa. By blending fresh mozzarella with akawi cheese, we elevate its texture and richness without sacrificing the nostalgia and comfort of mama’s kunafa. This is only the beginning. I am going to start a short series called “The Throughline” to better explain how Levant (not) Pizza connects food, people, cultures, and identity in a way that feels thoughtful and deliberate.
